Even if you are not a fan of sashimi or other raw fish dishes, you simply cannot leave French Polynesia without trying the national favourite - poisson cru. I have had poisson cru on a number of occasions - at restaurants, hotels, and the roadside roulettes in Papeete - but nothing compares to fresh poisson cru made in front of you on one of the beautiful island motus.
The best poisson cru I have eaten is on Marc's motu picnic in beautiful Huahine. Tour guide Armando, who is very cheeky and a whole heap of fun, demonstrates how to make poisson cru, and then all the lucky guests who have worked up an appetite snorkeling get to dig in.
As you can see from Armando's fantastic demonstration, poisson cru is diced fresh fish (in this case tuna) which is marinated in lime juice and salt. Add fresh chopped veggies like cucumber, onion and carrot, toss through freshly grated coconut milk, and serve. Heaven on a plate!
